Have you ever wondered where the word casserole comes from and what it actually means?
If your first guess was France you were right! It actually comes from the French “casse” which means pan. The term casserole is used to describe a selection of meat, fish or poultry and vegetables, with herbs, seasonings and liquid which is slowly cooked in a covered dish in the oven. Plus it’s usually served directly from the dish at the table. The term “casserole” can also be used to describe the ovenproof dish used.
However, let’s meet my version of Asparagus and Chicken Casserole, it’s creamy without the use of cream therefore lighter and I’ve used fresh asparagus since they’re in season at the moment. Feel free to use canned or better still frozen asparagus.
I have used a lot of asparagus, I chose to use minced chicken meat but feel free to use bite size pieces instead and I’ve added Italian sausage mince for added flavour.
This casserole ends up with quite a lot of creamy sauce so if you are a pasta lover like my husband, you can serve it together.
Right! Before we get into the full recipe, let’s talk about a few of the ingredients:
ASPARAGUS AND CHICKEN CASSEROLE INGREDIENT LIST:
Chicken: You can either use minced chicken meat or bite size pieces. I enjoy minced because the flavour gets all the way through the meat.
Asparagus: You can either use fresh asparagus (which I highly recommend when it’s in season) or canned/in jars. You could probably use frozen asparagus too. I haven’t tried it with this recipe but I certainly use it to make risotto and pasta dishes when it’s out of season and it always works out terrifically. I honestly prefer to use frozen vegetables to canned. But it’s totally your choice.
Italian Sausage Mince: I usually have sausage mince on hand living in Italy, and it adds extra flavour however you can certainly use bacon or speck. If you want to make this version because you don’t have the sausage mince on hand then use 340g (12oz) of minced chicken and 110g (4oz) bacon. Here’s a photo with that version:
Creamy sauce ingredients: Extra virgin olive oil, onion, vegetable milk (I used almond), tapioca flour and chicken broth
It’s creamy, and real comfort food and a simple no fuss recipe with a few simple ingredients.
