I have a heap of favourite recipes that I love to eat, but anything with basil and stuffing is sure to hit the spot.  This Chicken with Basil Sauce recipe looks elaborate but in reality it’s quite simple to make.

Plus I also love recipes that can be prepared ahead of time especially when you’re organizing a dinner party.  You don’t want to be slaving away all day and be dead tired by the time your guests arrive!

This happens mostly when you have quite a few people over and there’s a lot to cook.

On these events, I always plan my menu very carefully and ahead of time.  I usually choose at least one recipe that can be made the day before, if not two, and some recipes even taste better when left to soak up all the flavours.

The combination of flavours is just amazing. Such a simple recipe that can be prepared beforehand.

So another plus for this Chicken with Basil Sauce recipe is that you can prepare the chicken the day before and just cook it on the day.  Then all you have to do, is whip up the basil sauce just before serving. Don’t fear, you’ll whip it up in no time at all!

Gluten Free Dairy Free

I’ve also made this recipe gluten free by using gluten free breadcrumbs and dairy free too.  When making any type of basil sauce in my experience it’s always best to use fresh basil because it’s full of flavour and aroma.

CHICKEN WITH BASIL SAUCE

This Chicken with Basil Sauce recipe looks elaborate but in reality it’s quite simple to make. I've made this recipe dairy and gluten free. You can prepare the chicken a day ahead.

Ingredients

  • 4 chicken fillets
  • 1 cup gluten free breadcrumbs
  • 2 rashers of bacon, finely chopped
  • 2 teaspoons lemon juice
  • 1 clove garlic
  • 60g (2oz) dairy free butter
  • 30g (1oz) dairy free butter extra or alternatively cook with 2 tablespoons of extra virgin olive oil
  • Gluten free flour to coat fillets
  • BASIL SAUCE
  • 30g (1 oz) dairy free butter or 30ml (1 fl oz) virgin olive oil
  • 2 egg yolks
  • ½ cup dairy free cream
  • ½ cup chicken stock
  • ½ cup fresh basil leaves

Instructions

Cook finely chopped bacon until crisp. Drain on absorbent paper.

Gently pound chicken fillets thinly.

In a bowl combine the crispy bacon, lemon juice, gluten free breadcrumbs, crushed garlic and the dairy free butter. Mix well.

Place the breadcrumb mixture in the centre of each chicken fillet, fold over and pound the edges together. For extra security place a toothpick to hold in place. Now toss them in the flour.

Place the extra dairy free butter or oil in a pan, and brown the chicken on both sides and continue to cook slowly, turning occasionally.

For the Basil Sauce:

Melt the dairy free butter and cool.

Place the egg yolks in a blender and gradually add the cooled melted butter whilst blending.

Add the dairy free cream, chicken stock and the basil leaves, blend on low until smooth.

Transfer to a saucepan and heat through. Do not let it boil.
