The Teacake is a popular cake in our house. Quick and easy to make with a few simple ingredients. We usually add cinnamon to spice it up but you can add your favourite spice to the teacake to personalise it.

GREAT for afternoon tea, as well as a snack for the kids. Try spreading some non-dairy butter with it too, whilst it’s still warm! YUM!

TEACAKE

Ingredients

  • ½ cup pure brown cane sugar
  • 60g (2oz) non-dairy butter
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup spelt flour
  • 1/3 cup almond milk
  • 15g (1/2 oz) extra non-dairy butter, melted
  • 1 teaspoon cinnamon
  • 1 tablespoon pure brown cane sugar, extra

Instructions

Cream the sugar, egg, butter and vanilla until light and fluffy.

Stir in sifted flour and almond milk, mix well.

Pour mixture into a greased 20 cm (8 inch) round cake tin.

Bake in a moderate oven (180°C/350°F) for 20 minutes.

In the meantime, mix the the cinnamon and the sugar together.

Turn onto a wire rack and brush the top with the melted non-dairy butter and sprinkle with the sugar/cinnamon mix.

Serve warm or at room temperature.
