Here is an old favourite, ideal for afternoon tea with family and friends.

Make this delicious walnut cake, easy to whip up. A different take with tasty walnuts in between two layers of soft sponge. The first time I baked it and presented it to the family they were quite intrigued by it’s simplicity but at the same time found it to be a great alternative to the simple teacake.

WALNUT CAKE

Ingredients

  • 125g (4 ½ oz) non-dairy butter
  • 1 egg
  • ¾ pure brown sugar
  • 1 teaspoon vanilla
  • ½ cup non dairy plain yoghurt
  • ¾ cup spelt flour
  • 125g (4 ½ oz) chopped walnuts
  • ½ teaspoon cinnamon
  • 1 extra tablespoon of pure brown sugar

Instructions

Cream together the non-dairy butter, sugar, egg and vanilla until the mixture is light and fluffy.

Stir in the spelt flour, the yoghurt. Mix well.

Grease a 9 cm x 22 cm (3.5 x 8.5 inches) loaf tin and line base with oven paper.

Combine chopped walnuts, cinnamon and the extra brown sugar together.

Pour half the cake mixture over the base of the loaf tin, sprinkle evenly with half of the walnut mixture. Spread the remaining cake mixture over the top and sprinkle with the remaining walnut mixture.

Bake in a moderate oven (180°C/350°F) for about 45 minutes.

Allow to stand for a few minutes before turning onto a wire rack to cool.
