This is an easy to make side dish loaded with tasty speck and vegetables – full of flavour.
This Mashed Potato Casserole has one big super advantage: it can be made ahead of time. Just heat it in the oven when you’re ready! This can be a real life-saver when you’re making several dishes for a family gathering or during the holidays.
It will definitely become a family favourite.
Traditionally, mashed potatoes are served as a side dish, I know, I know, but with all the added extra ingredients it can easily become a brunch, lunch or main meal.
Plus if you’re having a hard time getting the kids to eat their quota of veggies, well look no further. I’m sure your kids will love it even with the hidden broccoli which are so super healthy.
Since we’re trying to be healthy I’ve sprinkled some gomasio (sesame seed salt) on the top instead of gluten free breadcrumbs to get a bit of a sesame flavour going.

Just about everyone, except my daughter, LOL, loves mashed potatoes and this is a new take on a traditional favourite. How can you not love mashed potatoes, right? Go figure!? I could never understand. Well each to his, or in this case, her own taste!

What is Speck?
Speck is smoked or even pickled pork belly. It’s a type of prosciutto but with a more distinctive flavour.
What if I don’t have Speck?
If you don’t have Speck, now worries, just use prosciutto or ham or even bacon.

Mashed Potato Casserole is a perfect side dish for any occasion. A scrumptious change to your run of the mill mashed potatoes – it takes mashed potatoes to a whole new level! Peel and cut the potatoes into similar sized cubes and steam until cooked through Mash potatoes with a vegetable or potato masher in a large bowl Take the cleaned broccoli florets and steam until cooked Chop up the cooked broccoli and add to the potatoes Finely chop up the chives and speck, add them to the bowl with the other ingredients Now add the eggs, nutritional yeast, dry mustard, salt and pepper into the bowl Mix well to combine Grease a 21x28cm (8”x11”) oven dish and add the potato mixture Level the top with the back of spoon If you want to create a grooved look like I did, lightly make a few lines with a fork Sprinkle with the gomasio, or some gluten free breadcrumbs Spray top with a little extra virgin olive oil, just a little Cook in a moderate oven (180°C/350°F) for about 30-35 minutes, until its golden.
