This Chocolate Jaffa Cake is made without flour or fats. It’s super moist and a must if you are a chocolate lover!
The orange rind and juice gives it a magical flavour provides a great combination with the chocolate.
Grease a 24cm (9 inch) cake tin and line the base with baking paper. Grind the walnut pieces so they resemble flour, you can use something like a spice & nut grinder for this. Grate the rind of the 2 oranges and then juice them. You will need about 80 ml (3 fl oz) of the orange juice. Melt the dark chocolate in a double saucepan, once melted add the orange juice. Divide the egg yolks and the egg whites. Whisk the egg whites until firm peaks form. Place the egg yolks and sugar in a bowl and beat, now add the chocolate orange mixture and mix together adding the sifted cocoa, the orange rind and the walnut flour. Mix well. Fold in the egg whites delicately. Pour the mixture into the greased cake tin and bake in a moderate oven (180°C/350°F) for approximately 35 minutes.CHOCOLATE JAFFA CAKE
