These Macadamia Caramel Squares are soooo delicious and gooey it’ll be hard to stop at just one piece!

I absolutely love caramel, it’s always been one of my favourite sweets. 

In fact, anything with caramel is always on the top of my list as far as desserts go; caramel ice cream, caramel swirls, caramel toffees, caramel sauce, oh and the list goes on …

The base of this recipe is extremely simple to make as is the macadamia caramel topping.  No slaving over a hot stove for hours with a food thermometer for testing.  No way!

I just adore this easy, no fuss recipe to make such a traditional favourite: Macadamia Caramel Squares.  You’ll have everyone coming back for seconds.

Macadamia Caramel Squares

A real winner.

MACADAMIA CARAMEL SQUARES

These Macadamia Caramel Squares are soooo delicious and gooey it’ll be hard to stop at just one piece!

Ingredients

  • 125g (4oz) dairy free butter
  • ½ cup of raw sugar
  • 1 egg yolk
  • 2 tablespoons of corn starch
  • 1 ¼ cup of spelt flour
  • ¼ teaspoon salt
  • 1 teaspoon baking powder
  • TOPPING:
  • ½ cup brown sugar
  • 90 g (3oz) dairy free butter
  • 1 tablespoon maple syrup
  • 125g (40z) roasted unsalted macadamia nuts

Instructions

Cream together the sugar and butter until light and fluffy, add egg yolk mixing well.

Add sifted flours, baking powder, corn starch, salt and mix to a firm dough.

Press the mixture into the base of a greased and lined lamington tin (28cm x 18cm/11in x 7in).

Bake in a moderate oven (180°C/350°F) for about 15 minutes or until golden brown.

Remove from the oven and evenly spread the topping mixture to the base.

Return to the oven and bake a further 5 minutes.

Allow it to cool in the tin and cut into squares when cold.

Topping: Place the maple syrup, brown sugar and dairy free butter into a saucepan.

Stir over low heat until the sugar is dissolved and the butter has melted. Continue to simmer gently over low heat for 5 minutes.

Add the chopped macadamia nuts and mix well.
