Everyone’s getting ready to go to the beach or for a picnic out in the open air or preparing for a BBQ with friends and family.
So I’m going to show you how to make a delicious Mediterranean Pasta Salad with lovely fresh tomatoes & basil, which are in season, tuna, dairy-free cheese and a handful of black olives. It’s so simple to prepare, takes no time at all to make and you should have most, if not all, of the ingredients on hand.
The great thing about these types of Pasta Salads is that they’re a healthy choice. No fancy sauces or dressings just some really good extra virgin olive oil. So why not prepare them for your work lunch. The fact that they are served cold means they can be prepared the day before. In fact, they usually taste better the next day because all the ingredients have had time to amalgamate with one another.
Pasta Salads are also a wonderful choice for a picnic or as a starter or accompaniment at your BBQ or to take on your boat trip like we used to.
The best thing about this recipe is that if you don’t feel like having pasta you can simply prepare the rest of the ingredients and serve it as a Tomato & Tuna Salad.
You’ll be amazed by the genuine Mediterranean flavours as well as it’s simplicity. The tomatoes are at their best at the moment bursting with nutrients like vitamin C and good doses of antioxidants to help fight against free radicals.
Plus let’s not forget Mother Nature’s natural antibiotic, GARLIC! We all love garlic at our house, I grew up eating it raw, finely chopped in salads, however if you don’t, please feel free to leave it out when making this Mediterranean Pasta Salad.
A delicious Mediterranean Pasta Salad with lovely fresh tomatoes & basil, tuna and dairy-free cheese. Easy and quick to prepare with just a few ingredients that you're sure to have on hand. Wash the fresh tomatoes and basil Cut the tomatoes into smallish pieces and finely chop the basil and place them in a bowl Peel and finely chop the garlic clove and add to the tomatoes Drain tuna Cut the dairy-free cheese into small pieces and add it, as well as the tuna, to the tomatoes chop up the black olives and add to the rest of the ingredients Dress with extra virgin olive oil, salt & pepper Set aside. Cook the pasta as per directions on the pack in salted water Drain and rinse quickly in cold water to stop it from cooking further and from cooking the basil in the salad. Drain well and mix it with the tomato mixture. If you think you need to add a little extra oil, do so. It's better to adjust the amount of oil now rather than having too much in the dressing. The amount of pasta in the recipe is for about 3-4 starter portions or 2 full portions for dinner.MEDITERRANEAN PASTA SALAD
