This delicious creamy Chicken in Wine Sauce dish is relatively quick to make. It’s a family favourite at our house and I usually serve it with mashed potatoes and string beans. I’m sure your family will love it too!
Place chicken fillets between two sheets of cooking paper and flatten slightly with a food hammer. Lightly coat each fillet with the spelt flour. Heat the non-dairy butter or oil in a pan, add the chicken and cook on both sides until golden brown; remove from pan. Chop the spring onions and add to the pan that you just removed the chicken fillets and cook for about 3 minutes, stir in the wine, bring to the boil, reduce heat and simmer for a further 3 minutes. Combine the non-dairy cream, cornflour and mustard and add to the pan and stir until boiling, season with salt and pepper, remove from heat. Now place the chicken fillets back into the pan.
